Two Dinners

Italian Frittata

This was just ok.  I wanted it to be better than what it was.  I know I did not fluff the eggs as much as I should have.  It is a protein packed meal, so it was good for me in that regard, but I'm not sure that I will make it again any time soon.


Cuban Tacos

I LOVE the Cuban restaurant in Louisville, Havana Rumba.  Oh, the many many good meals I have had there.  I saw this recipe, and was very excited to try it.


2.25 pounds ground beef
1 green pepper, chopped
4 green onions, chopped
10 pimento-stuffed green olives, chopped
1.25 cups tomato sauce
2 T Capers
3 garlic cloves, minced
1.5 t ground cumin
1 t dried oregano
2 T olive oil
salt and pepper to taste
tortillas

Combine beef, green pepper, onions, tomato sauce, cumin, oregano, and garlic.  Heat oil in large deep skillet.  (I did not pay attention and cooked my beef first.  I can imagine how much better it will be next time when I really let the flavors marinate together.)  Cook until beef is no longer pink.

oh, Havana Rumba!! I can still taste their Ropa Vieja!!!

If you ever make it here to visit, I'll make sure you get frittata lessons from my mom. I can live on her frittatas.
