Two New Recipes from Paula Dean

These will be making an appearance in my kitchen very soon:

Chicken, Spinach, and Cannellini Soup:

3 boneless skinless chicken breasts
2 (32 ounce) boxes chicken broth
1 tablespoon extra virgin olive oil
1 cup chopped onion
1 teaspoon minced garlic
1 (10 ounce) bag fresh baby spinach
1 (15.5 ounce) can cannellini beans, rinsed and drained
1 teaspoon salt
1 teaspoon ground black pepper

Ham Salad:

4 (8 ounce) packages of cooked diced ham, drained well
6 hardboiled eggs, peeled and chopped
1 cup chopped celery
3 tablespoons sweet pickle relish
2 tablespoons parsley
1 teaspoon black pepper
3/4 cup mayonnaise
