Hey, Girlfriend!!! I hope you've been enjoying your time back home. One of my best friends was just in Kentucky last week, checking out the University of Kentucky. He's more than likely going to be attending next year. She was SO impressed with everything about the school! =)
I've been meaning to email you about this "recipe" my sister-in-law found on Pinterest. She brought it to a party a month or so ago, and I've since made it myself. SO easy, and pretty tasty.
You simply mix a box of angel food cake mix and a can of crushed pineapple, juice and all. That's it! Just those 2 things! Mix it well. It will foam up a bit. Then pour it in a greased 13x9 (or a bundt pan, or angel food pan) Bake at 350 for 25-30 mins, until toothpick comes out clean, and the cake is golden.
It's so tasty, and pretty low in fat. My SIL frosted hers with Cool Whip. I topped my slices with whipped cream and diced strawberries. YUM!
Let me know if you try it. =)
