This stuff rocked my world! Amazing dinner! So happy to be able to take this for lunch tomorrow. I didn't put the portion of hot enchilada sauce in, and I did add a can of Rotel tomatoes.
The flavor combination of this dish is something that I would expect from a nice restaurant, yet it was quick enough that you could make it on a weeknight.

I am about half the way through 10 1/2 Things No Commencement Speaker Has Ever Said. This book has great humor to it, and boy is it ever true!
