What I've Cooked Lately....

Southwest Beef Pie (HH and I called it Taco Lasagna)

2 cups crushe nacho tortilla chips
1.5 pounds ground bef
1 can (8 oz.) tomato sauce
1/2 cup water
1 envelope taco seasoning
1/4 tsp. pepper
1 cup shredded Monterey Jack cheese

1. Place tortilla chips in an ungreased 9 inch pie plate; set aside. In a large skillet, cook beef over medium heat until no longer pink; drain. Add tomato sauce, water, taco seasoning and pepper. Bring to a boil; cook and stir for two minutes, or until thickened.

2. Spoon half of the meat mixture over chips; sprinkle with half of the cheese. Repeat layers. Bake, uncovered, at 375 for 10-15 minutes or until heated through and cheese is melted.

Makes 6 servings.

Pepperoni Pizza Skillet

5 cups egg noodles
1.5 lbs of ground beef
1.5 cups chopped pepperoni
1/2 cup green pepper
1 (14 oz.) jar of pizza sauce
1 can condensed cream of mushroom soup (undiluted)
1/2 cup grated parmesan cheese
1/4 tsp. garlic powder
1/4 tsp. dred oregano
1/2 cup shredded mozzarella cheese

1. Cook noodles according to package directions.
2. Meanwhile, in a large skillet, cook the beef and pepper over medium heat until the meat is no longer pink; drain. Stir in pepperoni, pizza sauce, soup, parmesan cheese, garlic powder and oregano.
3. Drain noodles; stir into skillet and heat through. Sprinkle with mozzarella cheese.

Makes 8 servings.

Today is the last day before our break begins. Today will be a pretty fun day. We are surprising our principal by all wearing shirts that have a special message about going to college. Our school is big about building a college mindset. I will try to have HH take a picture of the class in our shirts.

Tonight is basketball in the hood. I get to watch my kids play. I have four basketball players and four cheerleaders. I will be adding pictures of that too.

Let the festivities begin!

Lights Under Louisville...With the Goodmans :)

Not all my pictures turned out great, but we did have a great time hanging out with Alex and Rachel.

So yesterday there was an incident in the cafeteria involving my two of my boys, and slinging of ranch dressing. We normally eat lunch in the classroom together, but I just needed a break this week, so I let them eat in the cafeteria. I seriously just had to laugh. I mean come on really? We are inching closer to break, I can feel it!!!

Our Gingerbread House Making Adventures...

HH and I took a Ginerbread Decorating Class last night. We only had to go UP from last year's gingerbread house. It was so bad!

The the sticks are to help hold the sides together as the icing hardens.

My House:

I used broken ice cream cone shells to make my roof. Many people came with a bag full of goodies for their gingerbread house. I didn't think to do that.

HH is so proud.....

Here I am when my creative juices have just about ran out...

HH's house:

After staff meeting today, we are going with our friend's Alex and Rachel to see "Lights Under Louisville."

Here is our gingerbread house from last year:

Comfort

What is your favorite comfort quick "go to" food?

I found an ultra easy potato soup recipe that tastes wonderful. It is by far my favorite, and I'm enjoying some right now.

5 days until break!!!

Graduation Time....

I made this casserole to take to Alex and Rachel's house:

On the Road Again....

We are headed to Tennessee for HH to preach this weekend. If we have wi-fi where we are staying, I'll put up a post with graduation pictures.

Just curious....who is reading the blog from Hickory, NC? I've gotten a bunch of hits from there.

Today is the Day!

HH graduates from Southern Baptist Theological Seminary with his Masters in Divinity!!! We celebrated last night by me making him a red velvet cake. By the looks of the picture below, he was certainly a fan of the cake!

Graduation is at 10:00 this morning, then we are off to a lunch celebration. My parents and grandparents are coming to support Ben too. Lets get this party started!

Rockettes Pictures

How I wish we could have taken pictures during the show, but we were not allowed to. The stage was set up to look so fancy, completely making me forget that we were at Freedom Hall! We had amazing floor seats.

Here is a blurry picture of HH and I.

I like this picture the best!

I am so grateful that my sister agreed to host our family Christmas dinner, especially since she has a bigger place to host. I told her I would bring as much food as she wanted, and here is what I've decided to bring:

Side Dish:
Pepperoni Angel Hair Pasta Salad

Dessert:
